Weeknight Japanese Dinners

Miso-Glazed Salmon Skewers photo MisoGlazedSalmon-skewers.jpg

These Japanese recipes prove you can toss out the delivery menu and make Japanese dinners that go beyond sushi—and are ready faster than a delivery guy can get to your door anyway.

Miso-Glazed Salmon Skewers

Miso is one of my latest favorite ingredients—with its distinctive flavor, it makes a delicious marinade for these tender salmon skewers. With a sprinkling of spice, they’re great as an impressive appetizer or snack.

Japanese-Style Curry (Karei Raisu)

You can use whatever meat and vegetables you want, but for me, curry has two unbreakable rules: First, make sure that meat is nice and fatty. Second, embrace the premade blocks of Japanese curry roux.

Miso-Tahini Squash Soup With Brown Rice

A mixture of savory miso and nutty tahini adds a creamy richness to this filling vegetarian soup. A good dose of ginger and garlic, plus a few drops of hot chili oil, adds a punch of heat, making it the perfect cure-all on a blistery day.

Pork Tonkatsu With Shiso

This genius method encases several thin slices of pork in an especially crunchy coating. The meat stays super juicy during the quick frying time.

Sweet Potato and Brussels Sprout Okonomiyaki

For this nontraditional okonomiyaki recipe, you need to julienne the potato. Use a mandoline with the shredder attachment, or slice it very thinly into planks and then crosswise into very thin strips. Makes a terrific appetizer!
