Contemplating Cucumbers

My sister-in-law, who knows that I am “Going Green”, sent me this article about the nutritional and practical uses for the consummate salad component, the cucumber. While I can attest ot some of the accuracy of the nutritional information, I have yet to try out cleaning the sink or eating cucumber slices to ward off a hangover. So for something amusing

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

2. Feeling tired in the afternoon, put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours.

3. Tired of your bathroom mirror fogging up after a shower? Try rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Are grubs and slugs ruining your planting beds? Place a few slices in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

Tomatoes Pack a Nutritional Punch

Tomatoes  receive a lot of attention from nutritionists largely because of a phytonutrient called lycopene. Studies have long suggested that lycopene, which is contained in the red pigment, has antioxidant properties. Now growers are raising and marketing “high-lycopene” tomatoes. Indeed, a company based in Israel has developed a dried cherry tomato, which it is calling a “raisin tomato,” that contains almost 100 times the amount of lycopene in a regular cherry tomato.

In many of this week’s recipes I’m using a technique that may be new to some of you. Rather than peeling, seeding and dicing the tomatoes, I grate them on the large holes of a box grater. This is a technique I learned in Greece; it’s used throughout the Mediterranean. Cut the tomatoes in half, squeeze out the seeds if instructed to do so, and rub the cut side against the grater. Don’t worry: the skin is tough and you won’t scrape your hands. When you feel the holes of the grater against the inside of the tomato skin, you’re done. It goes quickly, and it’s a nifty time-saver.

Cottage cheese is an excellent, low-calorie source of protein – a half-cup of 1 percent low-fat cottage cheese has 14 grams of protein and only 82 calories. But unlike other dairy products, it isn’t an excellent source of calcium; much of that nutrient goes out with the whey during the curding process.

A Cool Vegetable for a Sizzling Summer

If it’s tomato season, it’s cucumber season, too – a time to think about light summer salads, garlicky chilled soups, even cooked cucumber dishes.

Their high water content makes cucumbers especially refreshing during the months when they’re at their best. Cucumbers also are a very good source of vitamin C  and caffeic acid, compounds that seem to help prevent water retention (which may be why cucumber rounds have long been favored as remedies for swollen eyes and sunburned skin). Cucumber juice also is used in natural skin care products because it contains silica, an important component of connective tissue and healthy skin.

Seek out unwaxed cucumbers, so you won’t need to peel them; the skin is a rich in fiber and a good source of potassium and magnesium. You won’t have to remove seeds if you’re able to use Persian or European cucumbers.

Greens for the Summer Heat

Spinach is the green that comes to mind for light summer dishes. It’s available year-round both at farmers’ markets and supermarkets, wilts in minutes, and afterward keeps well in the refrigerator.

In summer, you can use it for cold soups or quick omelets, or combine it with seasonal tomatoes in easy pastas. Spinach contains iron, vitamin A and vitamin C, manganese, folate, calcium, potassium and a variety of other nutrients.

One thing to note: The sodium content can be high in some brands of bagged spinach. A 3-ounce serving of Dole organic baby spinach, for example, contains 135 milligrams of sodium. The same amount from Fresh Express contains 65 milligrams. The difference may have to do with the solution that certain commercial producers use to wash the spinach.

If you do use bagged baby spinach, check the values on the package. A 3-ounce serving (85 grams) should not have more than 70 milligrams of sodium.

From the Bean Pot to the Table

When you have a big, savory pot of beans at hand, there’s no shortage of dishes you can make: salads, soups, even gratins. Beans offer protein and fiber, and they’re a good source of potassium, calcium, iron and folic acid.

Christmas limas are an heirloom bean: big and beautiful, they’re mottled with whites and purples. They’re just as lovely when cooked, turning light and dark reddish brown, with a sensuous texture and sweet, savory flavor. Christmas limas are expensive but worth the occasional splurge.

If you can’t find Christmas limas or don’t want to spend the money, all of this week’s recipes work well with more modestly priced large white limas. You can find them in many grocery stores and in Middle Eastern markets.

Eggplant on the Grill

Eggplant is at its best in the summer months, which, as luck would have it, is also when backyard grills start seeing regular use. It’s a wonderful coincidence, because eggplants love smoke. The vegetable’s flesh absorbs the flavor from the grill as easily as it does olive oil.

When you grill eggplant, you don’t need much olive oil – none if you’re grilling whole eggplants, just enough to lightly brush the slices if your dish calls for sliced eggplant.

If you live in an apartment and want to make some of this week’s dishes, I recommend using a panini grill for sliced eggplants. If you’re grilling whole eggplants, seek out smaller varieties, like narrow Japanese eggplants and some Mediterranean varieties, which don’t take so long to soften all the way through.

A ‘Winter’ Vegetable Shines in Summer

Beets you say? Ugh! Well, they are nutritious and when prepared well in hot and cold dishes quite tasty. They come in a number of varieties besides red, such as chioggas (pictured above: white striated), pink and golden. When buying fresh beets, buy them with the greens still attached. The greens are an excellent source of beta-carotene, calcium, iron and vitamin C. The beets themselves are rich in folate, magnesium and potassium. So if you eat well, you won’t need those vitamin supplements.
