Imbolc: First Light in the Dark of Winter

What a difference from last year to this. The weather has been unseasonably warm with only one minor snow event since the Winter Solstice here in the Northeast. Already the tips of early spring flowers are pushing up through the mulch. As was observed by our friend, davidseth, mud season has already arrived.

Although you’d never know it if you looked out your window here in the Northeast and throughout a good part of the northern hemisphere, we are nearing the midpoint between winter solstice and the vernal equinox. The Sun is noticeably rising earlier and setting later. It is a pleasure to take my early morning shower in daylight and start dinner preparation with daylight still illuminating the kitchen. There are seed catalogs arriving in the mail which has me contemplating the flower beds, the herb garden and maybe this year some vegetables.

In the traditions of Pagan and Wiccan religions, we celebrate this changing season as Imbolc, or Candlemas, which begins on January 31st, February Eve, and ends on February 2nd, a time of rebirth and healing. Imbolc is one of the eight Wiccan Sabbats of the Wheel of the Year, one of the four cross-quarter fire festivals. Brighid, the patroness of poetry and healing, is the Pagan Goddess associated with Imbolc.

Some of the traditions are the lighting of fires, decorating with red and white symbolizing the snow and the rising sun and green for new growth. Candles are lit in all the rooms of the house. Fires places and hearths are cleaned out of ashes and fires are lit. Since there is still snow drifts in my backyard, the fireplace will be just fine.

The symbols are ewes and lambs since Imbolc is derived from a Celtic word, “oimelc”, meaning ewe’s milk. Many of the foods that are serves are lamb, cheese, poppyseed muffins, cakes and breads. Dishes are seasoned with bay leaves and dried basil.

In rural places where farming is still a way of life, ploughs are decorated with flowers and then doused with whiskey. I know most of us have better things to do with whiskey. Sometimes the plough is dragged from door to door by costumed children asking for food and money, a kind of wintry “trick or treat”. Some traditional gifts, if your going to a friends house to celebrate, are garden tools, seeds and bulbs.

The Maiden is also honored as the “Bride” on this Sabbat. Straw corn dollies are created from oat or wheat straw and placed in baskets with white flower bedding. The older women make special acorn wands for the dollies to hold. The wands are sometimes burned in the fireplace and in the morning, the ashes in the hearth are examined to see if the magic wands left marks as a good omen. A new corn broom is place by the front door to symbolize sweeping out the old and welcoming the new.

Non-Pagans celebrate February 2nd as Ground Hog’s Day, a day to predict the coming weather, telling us that if the Groundhog sees his shadow, there will be ‘six more weeks’ of bad weather. It actually has ancient roots, weather divination was common to Imbolc, and the weather of early February was long held to be a harbinger of spring. On Imbolc, the crone Cailleach‘s grip of winter begins to loosen. She goes forth in search of kindling so that she may keep her fires burning and extend the winter a little longer. If Imbolc is rainy and cloudy, she will find nothing but twigs unsuitable for burning and will be unable to prolong the winter. If the day is dry and kindling is abundant, she will have plenty of fuel to feed her fire and prolong the cold of winter. Spring will be very far away. As an old British rhyme tells us that, “If Candlemas Day be bright and clear, there’ll be two winters in the year.”

Whatever you celebrate or believe, let us all hope that that the local groundhog doesn’t see his shadow and there is only one winter this year. I have nowhere else to pile the snow.

What’s Cooking: Super Bowl Chicken Wings

Next Sunday is the NFL’s big day, Super Bowl XLVI. It’s the New York Giants and the New England Patriots facing off in Lucas Oil Stadium in Indianapolis, Indiana. The  National Anthem will be sung by former American Idol winner Kelly Clarkson and Madonna will be the performer for the Super Bowl halftime show. Naturally, the commercials will be as entertaining as the game and Madonna.

But we here to talk food, specifically a game time favorite, Chicken Wings. For variety, I have two recipes that are easy to make and can be made ahead of time and warmed in the oven on game day. Both recipes are easily doubled, tripled or whatever.

The first recipe is for a spicy oriental wing and the second is for the traditional Buffalo style wing that will be a keeper.

Spicy Lacquered Chicken Wings

Ingredients:

3 pounds meaty chicken wings, tips removed

Salt

3 tablespoons soy sauce

3 tablespoons rice wine or sherry

3 tablespoons brown sugar

1 tablespoon grated ginger

6 garlic cloves, minced

1/2 teaspoon five-spice powder

1/4 teaspoon cayenne pepper

1/2 teaspoon grated orange zest

1 small cucumber, diced (about 1 cup)

6 scallions, slivered

2 or 3 small hot red chiles, very thinly sliced (or hot green chiles), optional

2 tablespoons crushed roasted peanuts

1 teaspoon sesame oil

1 handful cilantro leaves

2 navel oranges, sliced.

Preparation:

1. Rinse the wings, pat dry, season lightly with salt and put them in a large bowl. In a separate bowl, whisk together the soy sauce, rice wine, brown sugar, ginger, garlic, five-spice powder, cayenne and orange zest, then pour over the wings and massage well. Let marinate for 1 hour at room temperature or refrigerate (overnight is fine) and bring to room temperature.

2. Preheat the oven to 375 degrees. Arrange the wings in one layer in a low-sided baking dish or roasting pan (or use 2 pans) and place on middle shelf. Every 8 to 10 minutes, brush the wings with the marinade from the pan, adding 3 or 4 tablespoons water to dissolve the juices as necessary. Continue until well browned, glazed and cooked through, about 40 to 45 minutes. The wings may be cooked ahead and reheated if desired.

3. Pile the wings on a warm platter. Quickly assemble the garnish. In a small bowl combine the cucumber, scallions, chiles, crushed peanuts and sesame oil. Season with salt, toss lightly and scatter over the wings. Sprinkle with the cilantro. Surround with orange slices and serve.

Time: 1 hour, plus at least 1 hour’s marinating

Yield: 4 to 6 servings (18 to 20 wings).

Buffalo Chicken Wings and Blue Cheese Dip

The only hot sauce that I use is Frank’s Louisiana hot sauce. These wings can also be made with boneless chicken breast strips.

Ingredients:

Sauce

4 tablespoons Unsalted butter

1/2 cup Hot sauce , preferably Frank’s Louisiana Hot Sauce

2 tablespoons Tabasco sauce or other hot sauce, plus more to taste

1 tablespoon Dark brown sugar

2 teaspoons Cider vinegar

Wings

1 – 2 quarts Peanut oil (or vegetable oil) for frying

1 teaspoon Cayenne pepper

1 teaspoon Ground black pepper

1 teaspoon Table salt

3 tablespoons Cornstarch

3 pounds Chicken wings (18 wings), cut up (see illustrations below)

Creamy Blue Cheese Dressing and Vegetables

2 1/2 ounces Blue cheese , crumbled (about 1/2 cup)

3 tablespoons Buttermilk

3 tablespoons Sour cream

2 tablespoons Mayonnaise

2 teaspoons White wine vinegar

4 stalks Celery , cut into thin sticks

2 Medium carrots , peeled and cut into thin slices

Preparation:

1. For the Sauce: Melt butter in small saucepan over low heat. Whisk in hot sauces, brown sugar, and vinegar until combined. Remove from heat and set aside.

2. For the Wings: Preheat oven to 200 degrees. Line baking sheet with paper towels. Heat 2 1/2 inches of oil in large Dutch oven over medium-high heat to 360 degrees. While oil heats, mix together cayenne, black pepper, salt, and cornstarch in small bowl. Dry chicken with paper towels and place pieces in large mixing bowl. Sprinkle spice mixture over wings and toss with rubber spatula until evenly coated. Fry half of chicken wings until golden and crisp, 10 to 15 minutes. With slotted spoon, transfer fried chicken wings to baking sheet. Keep first batch of chicken warm in oven while frying remaining wings.

3. For the Creamy Blue Cheese Dressing and Vegetables: Mash blue cheese and buttermilk in small bowl with fork until mixture resembles cottage cheese with small curds. Stir in remaining ingredients (up to carrot and celery sticks). Taste and adjust seasoning with salt and pepper. Can be covered and refrigerated up to 4 days.

4. To Serve: Pour sauce mixture into large bowl, add chicken wings, and toss until wings are uniformly coated. Serve immediately with the carrot and celery sticks and blue cheese dressing on side.

5. To Make Ahead: The fried, unsauced wings can be kept warm in the oven for up to 1 1/2 hours. Toss them with the sauce just before serving.

Serve with lots of napkins. Bon Appétit

It’s that time of the year. No, not the State of the Union address. pfffttt. The Academy Awards nominations were announced this morning. It’s Oscar time, you silly gooses!

The 84th Academy Awards will be presented on February 26th hosted by one of the best hosts since Bob Hope, Billy Crystal and will air on the ABC network at 7 PM EST/ 6 PM CST.

As we did last year, we here at Stars Hollow, will be hosting a live blog and Oscar party. Prior to the big night, I will once again have food and drink suggestions that will entertain your palate as you watch the festivities. So get ready there is barely a month to prepare.

The start of 2012 brings with it a new year of skywatching, and lunar enthusiasts are gearing up for a stunning lineup of full moons. But, where does the tradition of full moon names come from?

Full moon names date back to Native Americans of a few hundred years ago, of what is now the northern and eastern United States. To keep track of the changing seasons, these tribes gave distinctive names to each recurring full moon. Their names were applied to the entire month in which each occurred.

  • Jan. 9, 2:30 a.m. EST — Full Wolf Moon, Old Moon
  • Feb. 7, 4:54 p.m. EST — Full Snow Moon or Full Hunger Moon
  • Mar. 8, 4:39 a.m. EST — Full Worm Moon, also known as the Full Crow Moon, Full Crust Moon of the Full Sap Moon
  • Apr. 6, 10:21 a.m. EDT — Full Pink Moon. Other names for this month’s moon were the Full Sprouting Grass Moon, the Egg Moon, and the Full Fish Moon

    A Few Facts About Peregrine Falcons:

       

    • The peregrine falcon’s scientific name is Falco peregrinus, which means “falcon wanderer”.
    • Three subspecies are recognized in North America: F.p. pealei from the coastal islands off Alaska; F.p. tundrius, which nests above the tree line in the Arctic; and F.p. anatum, which once ranged over North America from coast to coast.
    • Peregrine falcons are about the size and weight of a crow.
    • Peregrines normally grow to 15 inches in length with a 40-inch wingspan.
    • The speed of a peregrine has been said to reach 175 miles per hour or more. Experiments conducted by scientists put the bird’s diving speed at approximately 82 miles per hour and level flight at approximately 62 miles per hour.
    • Females are larger and more powerful than males. Adults have slate dark blue-gray wings and backs barred with black, pale undersides, white faces with a black stripe on each cheek, and large, dark eyes. Their wings are long and pointed.
    • Their prey includes ducks, pheasants, and pigeons. Biologists are frequently surprised by the variety of species brought to Ohio nests. Remains of meadowlarks, chimney swifts, and woodcock show that falcons find many different birds in their urban surroundings.
    • Prey is caught in flight. Using its great speed, the falcon delivers a powerful blow to its prey with a half-closed foot. It retrieves the dead bird either in mid-air or after it falls to the ground.
    • Although they have a high mortality rate, peregrines have been known to live as long as 15 years.
    • In the 1960s, scientists discovered that a pesticide called DDT was interfering in the egg shell formation of meat and fish eating birds. Healthy birds were laying eggs so thin they were crushed by the weight of the incubating adult.
    • By 1965, no peregrine falcons were fledged in the eastern or Central United States.
    • By 1968, the peregrine population was completely eradicated east of the Mississippi River.
    • In 1972, use of DDT was severely restricted in the United States and worldwide.
    • In 1979, the Eastern Peregrine Recovery Plan was developed to restore a peregrine population to the eastern United States.
    • Peregrine falcons are a threatened species in Ohio.
    • Traditionally, they nested on ledges of high cliffs in remote areas. In cities, they use niches along ledges, such as inset windows or window boxes.

    We have two Peregrines and a Red Tail Hawk that use our yard to dine on their catch.

    How Did They Do That? Easy, Balls

    Stonehenge is a massive prehistoric stone monument located just north of Salisbury, England, constructed anywhere from 3000 BC to 2000 BC. The surrounding circular earth bank and ditch, which constitute the earliest phase of the monument, have been dated to about 3100 BC. The site and its surroundings were added to the UNESCO’s list of World Heritage Sites in 1986.

    The history of Stonehenge’s function and construction is subject to much debate since it was produced by a culture that left no written records that has led to multiple theories. Whatever religious, mystical or spiritual elements were central to Stonehenge, its design includes a celestial observatory function, which might have allowed prediction of eclipse, solstice, equinox and other celestial events important to a contemporary religion.

    Two of the big questions about the construction of Stonehenge are: Where were these stones? How were these massive stones, weighing tons, moved from where they were quarried? Those questions have some answers, the first, official and the second, an interesting theory.

    It’s Official: Stonehenge Stones Were Moved 160 Miles

    Some of the volcanic bluestones in the inner ring of Stonehenge officially match an outcrop in Wales that’s 160 miles (257 kilometers) from the world-famous site, geologists announced this week.

    As it looks today, 5,000-year-old Stonehenge has an outer ring of 20- to 30-ton sandstone blocks and an inner ring and horseshoe of 3- to 5-ton volcanic bluestone blocks. [..]

    So how did a primitive society move these gigantic stones from Wales to the plains of Salisbury? Easy. Balls. Or at least that is the lasted theory that archaeologists have presented:

    A previous theory suggested that the builders used wooden rollers-carved tree trunks laid side by side on a constructed hard surface. Another imagined huge wooden sleds atop greased wooden rails.

    But critics say the rollers’ hard pathway would have left telltale gouges in the landscape, which have never been found. And the sled system, while plausible, would have required huge amounts of manpower-hundreds of men at a time to move one of the largest Stonehenge stones, according to a 1997 study.

    Andrew Young, though, says Stonehenge’s slabs, may have been rolled over a series of balls lined up in grooved rails, according to a November 30 statement from Exeter University in the U.K., where Young is a doctoral student in biosciences.

    Young first came up with the ball bearings idea when he noticed that carved stone balls were often found near Neolithic stone circles in Aberdeenshire, Scotland
