What’s Cooking: Dilled Salmon Tartare

Every Thanksgiving, my daughter includes a new recipe to the menu. This year it was an appetizer, Dilled Salmon Tartare on Whole Grained Bread from Bon Appetit. It was quite a hit. She served it with an oaky Chardonnay and a salad of spring greens with an herb vinaigrette that mirrored the herbs used to marinate the salmon.  She found the whole grained bread slices already toasted at Trader Joe’s. The recipe serves 6 but is easily doubled.

Dilled Salmon Tartare on Whole Grain Bread

ingredients

   1/4 cup honey mustard

   1/4 cup mayonnaise

   1 (1-pound) piece frozen salmon fillet, thawed, cut into 1/4-inch cubes

   1/4 cup finely chopped red onion

   1/4 cup chopped fresh dill

   2 tablespoons drained capers, coarsely chopped

   2 tablespoons fresh lime juice

   2 tablespoons minced shallot

   2 teaspoons olive oil

   3/4 teaspoon coarse kosher salt

   1/2 teaspoon ground black pepper

   3 5x3x1/4-inch slices whole grain bread

preparation

Mix mustard and mayonnaise in small bowl to blend. Season to taste with salt and pepper. DO AHEAD Can be made 3 days ahead. Cover and refrigerate.

Mix salmon and next 8 ingredients in medium bowl. Cover and chill until cold, at least 30 minutes. DO AHEAD Can be made 4 hours ahead. Keep refrigerated.

Spread 1 tablespoon mustard mixture on 1 side of each bread slice. Cut each bread slice into 6 pieces. Divide salmon tartare mixture among bread slices. Transfer to platter and serve.

Chinese sand artist tickles the heartstrings of manga fans with stunning sand manga drawings

Many of us can’t even draw a decent manga portrait on paper, but there are talented individuals who manage to replicate character illustrations on food, and some using just their bare hands and sand.

Chinese sand artist Zhao Ying Li creates portraits of manga characters from titles such as Slam Dunk and Detective Conan that are so detailed it’s hard to believe they were drawn with sand. See the creation process after the break!

Sand drawing is appreciated as a form of performance art, unlike conventional drawings or paintings. Every single dot, line and gradient is drawn with nothing but sand by the nimble, artistic hands and fingers of the artist, and in the case of a live performance, drawn precisely within a timed session in sync with background music and illumination arrangements.

November 29 is the 333rd day of the year (334th in leap years) in the Gregorian calendar. There are 32 days remaining until the end of the year.

On this day in 1963, one week after President John F. Kennedy was fatally shot while riding in a motorcade in Dallas, Texas, President Lyndon Johnson establishes a special commission, headed by Supreme Court Chief Justice Earl Warren, to investigate the assassination.

After 10 months of gathering evidence and questioning witnesses in public hearings, the Warren Commission report was released, concluding that there was no conspiracy, either domestic or international, in the assassination and that Lee Harvey Oswald, the alleged assassin, acted alone. The presidential commission also found that Jack Ruby, the nightclub owner who murdered Oswald on live national television, had no prior contact with Oswald.

According to the report, the bullets that killed President Kennedy and injured Texas Governor John Connally were fired by Oswald in three shots from a rifle pointed out of a sixth-floor window in the Texas School Book Depository. Oswald’s life, including his visit to the Soviet Union, was described in detail, but the report made no attempt to analyze his motives.

About Those Embeds

I love long holiday weekends, they’re the perfect time for people to dump shit on you without anyone much noticing.

In its continuing campaign of convincing us that Google == Evil (that’s how you write an equation test folks, anything else is just an assignment of value) YouTube is once again ignoring the not inconsiderable universe of people who use e-bay and decided to only provide <iframe> embed codes for their videos.

Unfortunately this is also a problem for us.

Only lofty Admins like me (and make no mistake, I’m about as lofty as you get here so don’t fuck with me if you know what’s good for you) can directly embed <iframes> and while you may in an egalitarian way say-

ek, why not just make everyone an Admin?

Well, it’s not just that I’m an authoritarian asshole but there are plenty of buttons you can push that screw things up and the reason I know that is because I’ve pushed them.

Now we are in communications with our software providers, the kind, patient, and understanding people at Soapblox to correct this condition but in the mean time I’d like to thank BobbyK for finding a temporary fix-

Generate YouTube embed codes

Cut and paste the first thing you see when you go to YouTube and hit Embed just as you would to post to Facebook, in this case-

into the Generator.  Now delete that part which always says-

and push the Generate! button.  You’ll come out with a piece of crap that looks like this-
