Pizza Without the Dough

Lavash is a flatbread, a staple of meals in Iran, Azerbaijan, Armenia and Georgia.

When you bake it, lavash becomes crispy on the edges. If you let it go for too long in the oven, it will be crisp all the way through, like a cracker. Despite the texture, lavash makes a great vehicle for any number of healthy toppings.

At Iranian markets, lavash is sold in sheets so big that half the bread dries out before you can finish it. As an alternative, Trader Joe’s now sells lavash in 9-by-12-inch sheets. Half of one makes a perfect serving.

Scrambled Eggs: Not Just for Breakfast

These perfect protein packages (each large egg has six grams of complete protein and just 71 calories) take minutes to prepare. Like omelets and frittatas, scrambled eggs make a great setting for vegetables. Generally, the vegetables are cooked first, then the eggs are added to the hot pan and stirred until scrambled. Mexican cooks add eggs to a seared tomato salsa for the iconic huevos a la Mexicana, while Tunisians make a spicy scrambled egg dish with onions, sweet and hot peppers, tomatoes and potatoes. Simpler, milder scrambled egg dishes can be made with whatever produce lingers in your refrigerator, like mushrooms, zucchini or greens.

Scrambled Eggs With Peppers, Tomatoes and Potatoes

These Tunisian-inspired eggs make a satisfying one-dish meal. The eggs are spiced with cayenne or harissa, ground caraway and coriander.

Use regular white or brown button mushrooms, or splurge on wild mushrooms.

Mexican Scrambled Eggs

Serve the eggs with warm corn tortillas.

Scrambled Eggs With Grated Zucchini

These scrambled eggs, flecked with squash, take just a few more minutes to throw together than plain scrambled eggs, and it’s an excellent way to use that zucchini lingering in your vegetable drawer. If you want a richer dish, serve this with avocado.

Scrambled Eggs With Peppers

This dish, a classic piperade from southwestern France, is a great way to use those vitamin-rich peppers still abundant in farmers’ markets. You can mix and match peppers here. Just be sure to cook them for a long time so that their juices infuse the eggs.

Beyond Pesto: New Ideas for Basil

Basil contains flavonoids that are believed to have some antioxidant properties; it’s an excellent source of vitamin K, and a very good source of iron, calcium and vitamin A.

Pots of Basil will also keep away flies although it is unclear why, possibly the fragrant oils. The oils have also shown to inhibit the growth of some pathogenic bacteria that has become resistant to antibiotics.

What’s not to like about quinoa? This grain has a delicate texture, nutty flavor and high protein content – an average of 16.2 percent protein per serving, compared to 7.5 percent for rice and 14 percent for wheat. (Some varieties provide more than 20 percent protein.) Quinoa also is easy to cook and free of gluten. And best of all, it’s versatile.

Cooking With a Mexican Favorite, the Tomatillo

If you’ve eaten salsa verde in a Mexican restaurant, you’ve eaten tomatillos. Though the name suggests that tomatillos are small green tomatoes, they are not. They’re in the same family as tomatoes but more closely related to the cape gooseberry and surrounded by a similar papery husk. Always look for tomatillos that have filled their husks, as they are not fully mature until they do. Remove the husks, then rinse the tomatillos, which will be sticky, and they’re ready to cook. . . .

Look for tomatillos that are relatively small, about 1 1/2 ounces, or slightly larger than walnuts. According to the Mexican food aficionado Rick Bayless, the big ones, sometimes larger than golf balls, are not as flavorful and can taste bitter. . . .

Tomatillos are a good source of iron, magnesium, phosphorus and copper, as well as dietary fiber, vitamin C, vitamin K, niacin, potassium and manganese.
