t’s easy to say and easy to document, but quite difficult to really internalize, that the United States is in the process of imperial collapse.  Every now and then, however, one encounters certain facts which compellingly and viscerally highlight how real that is.  Here’s the latest such fact, from a new study in Health Affairs by Columbia Health Policy Professors Peter A. Muennig and Sherry A. Glied (h/t):

   

In 1950, the United States was fifth among the leading industrialized nations with respect to female life expectancy at birth, surpassed only by Sweden, Norway, Australia, and the Netherlands.  The last available measure of female life expectancy had the United States ranked at forty-sixth in the world.  As of September 23, 2010, the United States ranked forty-ninth for both male and female life expectancy combined.

There is, however, some good news:  the U.S. is now in fifth place in total number of executions, behind only China, Iran, Iraq and Saudi Arabia, and comfortably ahead of Yemen and Sudan, while there are two categories in which the U.S. has been and remains the undisputed champion of the world — this one and this one.

And the rich get richer one life at a time

King Among Grains

What’s not to like about quinoa? This grain has a delicate texture, nutty flavor and high protein content – an average of 16.2 percent protein per serving, compared to 7.5 percent for rice and 14 percent for wheat. (Some varieties provide more than 20 percent protein.) Quinoa also is easy to cook and free of gluten. And best of all, it’s versatile.

Cooking With a Mexican Favorite, the Tomatillo

If you’ve eaten salsa verde in a Mexican restaurant, you’ve eaten tomatillos. Though the name suggests that tomatillos are small green tomatoes, they are not. They’re in the same family as tomatoes but more closely related to the cape gooseberry and surrounded by a similar papery husk. Always look for tomatillos that have filled their husks, as they are not fully mature until they do. Remove the husks, then rinse the tomatillos, which will be sticky, and they’re ready to cook. . . .

Look for tomatillos that are relatively small, about 1 1/2 ounces, or slightly larger than walnuts. According to the Mexican food aficionado Rick Bayless, the big ones, sometimes larger than golf balls, are not as flavorful and can taste bitter. . . .

Tomatillos are a good source of iron, magnesium, phosphorus and copper, as well as dietary fiber, vitamin C, vitamin K, niacin, potassium and manganese.

Contemplating Cucumbers

My sister-in-law, who knows that I am “Going Green”, sent me this article about the nutritional and practical uses for the consummate salad component, the cucumber. While I can attest ot some of the accuracy of the nutritional information, I have yet to try out cleaning the sink or eating cucumber slices to ward off a hangover. So for something amusing

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

2. Feeling tired in the afternoon, put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours.

3. Tired of your bathroom mirror fogging up after a shower? Try rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Are grubs and slugs ruining your planting beds? Place a few slices in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

Tomatoes Pack a Nutritional Punch

Tomatoes  receive a lot of attention from nutritionists largely because of a phytonutrient called lycopene. Studies have long suggested that lycopene, which is contained in the red pigment, has antioxidant properties. Now growers are raising and marketing “high-lycopene” tomatoes. Indeed, a company based in Israel has developed a dried cherry tomato, which it is calling a “raisin tomato,” that contains almost 100 times the amount of lycopene in a regular cherry tomato.

In many of this week’s recipes I’m using a technique that may be new to some of you. Rather than peeling, seeding and dicing the tomatoes, I grate them on the large holes of a box grater. This is a technique I learned in Greece; it’s used throughout the Mediterranean. Cut the tomatoes in half, squeeze out the seeds if instructed to do so, and rub the cut side against the grater. Don’t worry: the skin is tough and you won’t scrape your hands. When you feel the holes of the grater against the inside of the tomato skin, you’re done. It goes quickly, and it’s a nifty time-saver.
