Cauliflower Dishes With Some Sicilian Flair

Every once in a while I revisit the cuisine of a particular part of the world (usually it is located somewhere in the Mediterranean). This week I landed in Sicily. I was nosing around my cookbooks for some cauliflower recipes and opened my friend and colleague Clifford A. Wright’s very first cookbook, “Cucina Pariso: The Heavenly Food of Sicily.” The cuisine of this island is unique, with many Arab influences – lots of sweet spices, sweet and savory combinations, saffron, almonds and other nuts. Sicilians even have a signature couscous dish, a fish couscous they call Cuscusù.

Vegan Pantry Dinners for the New Year

The Versatility of Spinach

Spinach has remained a part of my holiday ritual. I love the convenience of bagged spinach, but I prefer the richness of the lush bunches I get at the farmers’ market. I don’t mind stemming and washing it, but if you are pressed for time the bagged spinach is a godsend, especially if you live in a cold climate and don’t have access to farmers’ market spinach in December.

Healthy Holiday Snacks

Spiced Wok Popped Popcorn

This week’s recipes come in response to requests from readers for ideas for snacks to have around the house during the end-of-the-year holidays: something to replace the candy bowls and cookies that are usually there and easy to nosh on. Commercial snacks that are healthy (or healthier – read the labels closely) are available including vegetable chips and pita crisps, seaweed snacks, nuts, dried fruit and trail mix. But some of these have a lot of salt and they can be pricy.

Mental Illness: A Cause Near and Dear to Me

This is actually a revision to a post i first wrote back in 2007, but it’s still just as pertinent (and pretty much unlearned) today as it was then and always has been… Also, to be clear, it’s going to take a lot of things to help prevent the now seemingly constant shootings we have here, including smart and serious gun control laws being enforced, better mental health awareness and parity, and perhaps even looking at our culture as a whole. I am only addressing that which has directly affected my life.

This post is about an issue near and dear to my heart as well as important in the wake of the Connecticut, Portland, and Aurora shootings, as well as all the other recent instances of mass shootings and suicides recently.

Often the first reaction in the wake of such incidences is shock; shock that it happened, and shock that the person could do what they did. But after all the surrounding knowledge comes to light, it’s really not that surprising that it happened or that the person in question could do it. Such is mental illness; only visible when we choose to see it.

A New Twist on a Hanukkah Staple

Red Cabbage, Carrot and Broccoli Stem Latkes

For those of us who are celebrating Hanukkah this week that is both good news and bad. The frying in oil is not so bad, but the starchy potatoes that make the best latkes are not so great. So I decided to experiment with other vegetables for my latkes, combining carrots and spinach, cabbage and kale, sweet potatoes and apples. I even used up the broccoli stems that were lingering in my refrigerator bin in one batch, mixing them with red cabbage and carrots. I used exotic spices like nigella seeds, cumin, and caraway, as well sweet spices like cinnamon and nutmeg. My vegetable latkes were not as crispy as potato latkes but nobody seemed to mind; they were still delicious.

Reasons to Love Costco & Be Wary of Eating Out

Costco is the largest membership warehouse club chain in the United States and, unlike Walmart, has managed to give its employees a fair living wage and benefits. One other thing they do, they have a level of food safety that exceeds government standards:

Costco’s 250,000-square-foot beef plant in California’s fertile San Joaquin Valley is not your typical meat plant.

It’s relatively new and spotless. There are high-tech, hand-wash sanitation stations scattered throughout the plant connected to counters that allow plant officials to make sure each employee uses them at least four times daily.

The massive meatball cook room is built entirely of stainless steel. Even the loading docks, where trucks deliver raw beef, is sanitized regularly to prevent contamination. [..]

The plant has a decided advantage over Big Beef’s slaughter plants because they don’t kill cattle here, so there are no manure-covered hides or intestines to contaminate raw beef products.

But just the same, Costco’s approach is different.

All meat arriving at the Tracy plant comes with a certificate from the supplier pledging that pre-shipment tests showed no E. coli contamination, something other companies are also doing now. But Costco tests it anyway, and if it tests positive, it’s shipped back to the supplier. Less than one percent is shipped back.

Then the finished products – hot dogs, hamburger patties, ground beef, Polish sausages and meatballs – are tested again before they leave the plant.

In fact, Costco officials boast that, until recently, they did more E. coli testing in the company’s lab than the USDA does nationwide at all other beef plants combined.

Despite all precautions, Costco did get caught up in a recent E. Coli contamination recall that was caused by the dangerous practice of mechanical meat tenderizing:

The process has been around for decades, but while exact figures are difficult to come by, USDA surveys show that more than 90 percent of beef producers are now using it.

Mechanically tenderized meat is increasingly found in grocery stores, and a vast amount is sold to family-style restaurants, hotels and group homes.

Although blading and injecting marinades into meat add value for the beef industry, that also can drive pathogens – including the E. coli O157:H7 that destroyed Lamkin’s colon – deeper into the meat.

If it isn’t cooked sufficiently, people can get sick. Or die.

There have been several USDA recalls of the product since at least 2000, and a Canadian recall in October included mechanically tenderized steaks imported into the United States, but it’s not clear how many people were sickened.

In a 2010 letter to the USDA, the American Meat Institute noted eight recalls between 2000 to 2009 that identified mechanically tenderized and marinaded steaks as the culprit. Those recalls sickened at least 100 people.

But food safety advocates suspect the incidence of illness is much higher.

An estimate by the Center for Science in the Public Interest, an advocacy group, suggests that mechanically tenderized beef could have been the source of as many as 100 outbreaks of E. coli and other illnesses in the United States in recent years. Those cases affected more than 3,100 people who ate contaminated meat at wedding receptions, churches, banquet facilities, restaurants and schools, the center said.

E. coli O157:H7 is a potentially deadly bacterium that can cause bloody diarrhea, dehydration and, in severe cases, kidney failure. The very young, seniors and people with weak immune systems are most at risk. It is impossible to eliminate it from beef cattle, even by using antibiotics, which nay contribute to antibiotic-resistant pathogens in humans, meaning illnesses once treated with a regimen of antibiotics are much harder to control. There are 73,480 reported illnesses linked to E. coli O157:H7 infections each year in the United States, leading to 2,168 hospitalizations and 61 deaths. There may be more.

Mechanically tenderizing beef drives the contamination deeper into the meat, so that even cooking it thoroughly makes it difficult to kill the bacteria. E. Coli can survive in cold spots even when the cut of meat appears to be fully cooked. The McClatchy News article points out a 2011 warning in Journal of Food Protection that “cooking highly contaminated bladed steaks on a gas grill – even at 160 degrees like hamburger – might not kill all E. coli bacteria.”

Costco labels all products that have been bladed and recommends that  “for your safety USDA recommends cooking to a minimum temperature of 160 degrees.” The USDA encourages labeling but does not require it. Perhaps it’s time to protect the consumer from “Big Beef.”

For Holiday Party Fare, Try a Purée

Spinach and Yogurt Dip

Here’s a new concept: view the holiday party season as an opportunity to eat more vegetables and legumes. I spent a week making Mediterranean vegetable and bean purées that we spread on toasted bread and devoured for lunch and dinner every day. [..]

This week the focus is on the savory (in a couple of weeks I’ll bring you some sweeter and crunchier ideas). As always, the cuisines of the Mediterranean offer everything I am looking for – vibrant, nutrient-dense seasonal vegetables and legumes flavored with herbs, spices and aromatics. I transformed some of my favorite vegetable and legume dishes into spreads simply by blending them in a food processor. Serve these on toasted croutons or crackers, or if you need a lower-carb delivery system, spoon or pipe onto squares of red pepper, endive leaves, or cucumber rounds.

Salad Days (and Nights)

Turkey Cobb Salad

These salads are all substantial enough to eat as a meal and have enough calories to sustain you until the next. But you could serve smaller portions as a starter or side dish. I found that some, like the Asian chopped salad and the quinoa salad, had great staying power throughout the week. If you are vegetarian and want to include a high protein food in the salads that call for turkey or chicken, use the baked seasoned tofu in the Asian chopped salad. It would be a welcome addition to any of these salads.

To End the Feast, Something Sweet but Light

Pear Cranberry Galette

It’s always the desserts that tip the balance at Thanksgiving. We’re pacing ourselves, full but not too full, until we get to those irresistible pies. I love them as much as anybody, but I thought I’d work on some pielike desserts this week that have the fillings we love without as much butter in the crust. Galettes, phyllo-wrapped strudel and clafoutis all fit the bill. I filled layers of phyllo with a mixture of caramelized chopped apples, pears, mixed dried fruit and slivered almonds and rolled it up into two beautiful strudels, one of which I froze and will pull out and bake on Thanksgiving. Galettes are more rustic than pies, but they’ll look beautiful on any Thanksgiving buffet, and judging from the way they went over in my house when I was testing the recipes, the apple and the pear and cranberry galettes will please a crowd. A clafoutis is one of the easiest impressive desserts that you can make; it looks a bit like a pie, but there’s no crust. Pears are the fruit to use at this time of year.

I used Bartlett pears for this juicy galette, but pretty much any variety will work, as long as they’re not overly ripe.

I wanted to do something with pumpkin that didn’t involve a crust, so I made a mousse and piped it into small glasses, then sprinkled ground toasted hazelnuts on top.

A great rustic apple pie for Thanksgiving, this has very little butter in the pastry and a minimum of sweetening. It’s all about the apples.

This strudel is made with phyllo dough. When I tested it the first time, I found that I had enough filling for two strudels. Rather than cut the amount of filling, I increased the number of strudels to 2, as this is a dessert you can assemble and keep, unbaked, in the freezer.

If you don’t want to make a crust but want something tartlike for your Thanksgiving dessert, a clafoutis, which is something like a cross between a flan and a pancake, is a great choice.
